    IntroductionThere are three important meals that people should eat daily: breakfast, lunch, and dinner. Children spend the majority of their time at school; therefore, most school-aged children will eat breakfast and lunch at school. However, school breakfast and lunch programs were not always accessible to all students. According to Gordon Gunderson (1971), the United States Department of Agriculture (USDA) established the National School Lunch Act, signed by President Harry Truman in 1946, and piloted the breakfast program in 1966 to ensure that children receive adequate nutrition. In 1904, Robert Hunter's book, Poverty, was a strong influence that pushed the United States to feed hungry and needy children in school, and in the same year, John Spargo published his book, The Bitter Cry of the Children, which raised awareness of the impact of malnutrition on children. physical and mental well-being of children (Gunderson, 1971). Children cannot learn on an empty stomach. They will not be able to concentrate on the course material, which will lead to lower test scores; therefore, school catering is essential to the well-being of each student's success. Over time, foodservice industries have evolved and changes have been made based on increasing labor costs and a critical shortage of skilled personnel in food production (Spears & Gregoire, 2004). Conventional restoration corresponds to the traditional operations that have been used. This is still the predominant form of restaurant operation; however, many other forms have evolved in order to reduce costs and increase efficiency.
